I've used almost every flavour of linux, mostly RHEL and derivatives, currently running Rocky on my server and Alma on the household shared box.
Kali is great for penetration testing and is what I'm using on my daily machine but the updates come so hard and fast you have to be careful things don't break.
Debian however is in my opinion the best for security and stability, I have it installed on an imac atm and it runs flawlessly.
